Cauliflower Fried Rice

A dish to enjoy when the take-out menus are calling. Screw them! Make your own version sans MSG and all the other shit, and choose between cauliflower or brown rice as your base. Yes, cauliflower rice is totally worth the hype. Add all the frozen and fresh veggies you desire - and egg, chicken or shrimp if you want to make a version that isn’t plant-based!

 

 

Serves: 2

 

 

Optional: frozen edamame, baked tofu, scrambled egg, chicken, or shrimp.

Time: 30 minutes

 

Cauliflower rice:

 

1 small head cauliflower

1 tablespoon coconut oil

sea salt

 

Fried rice:

 

½ cup frozen veggies (peas and carrots)

2 cups cauliflower rice or brown rice

1/2 cup of frozen edamame (optional)

Baked tofu (optional, and recipe below)

 

Sauce:

 

3 T tamari or liquid aminos

1 T tahini

2 T coconut sugar, or brown sugar

1 t garlic powder

1 t hot sauce or chili sauce

1 t sesame oil

 

Directions

 

Cook 1 cup of brown rice or prepare 2 cups cauliflower rice. Set aside.

To cook cauliflower rice, break off florets of cauliflower, rinse and pat dry.

Use a food processor or grater to turn the florets into “rice”. In the food processor, pulse half at a time until finely chopped, dump out, and then process the other half.

To cook, heat a large pan over medium to medium-high heat and swirl coconut oil along the bottom. Add cauliflower and a pinch of salt and cook for about 5 minutes until it starts to brown.

Next, in a large pan over medium heat (no oil needed for this step, the liquid from the frozen veggies will do the trick!), cook the frozen carrot and peas for about 3-4 minutes.

While heating the veggies, prepare the sauce.

Add the cauliflower rice, or cooked brown rice to the pan with teaspoon of oil. “Fry” for 1-2 minutes. Pour sauce over and stir well.

Lastly, scramble an egg in a small pan, and mix it into the fried rice if desired.

Top with baked tofu (recipe below)

 

Optional Tofu: If you have more time, or have already pressed tofu for the tofu scramble, add this simple tofu recipe!

 

 

Ingredients:

 

½ block of pressed firm tofu

1 t hot sauce of choice

1 T liquid aminos or tamari (sub for soy sauce)

1 t garlic powder

sea salt to taste

 

Directions:

 

Preheat oven to 375 degrees.

Cut tofu into cubes.

Line a baking sheet with parchment paper or spray with cooking spray. Place tofu on baking sheet spread evenly. Whisk together the sauce ingredients, and pour over tofu.

Toss to coat tofu.

Bake for 20 minutes, then toss tofu to other side. Continue to bake another 10-20 minutes, until golden brown.
